Strawberry-Watermelon Cooler
This flavorful drink can also be frozen to make a refreshing sorbet.
2 cups halved strawberries
2 cups ripe, red watermelon cubes, cut in 1-inch pieces
2 tablespoons sugar, or more to taste
2 tablespoons fresh lemon or lime juice, or more to taste
1 cup ice cubes
3/4 cup carbonated lemon-lime drink or ginger ale
1 tablespoon finely-chopped fresh mint leaves
Mint sprigs for garnish
Freeze
prepared fruit for at least 30 minutes. In a blender, combine fruit,
sugar, lemon juice and ice cubes. Pour in lemon-lime drink. Blend
ingredients until slightly slushy. Stir in fresh mint. Pour into two
tall chilled glasses. Garnish with mint sprigs and serve at once. Makes
two drinks.
Note: For added flavor, use ice cubes made from
watermelon, strawberry or cranberry juice; adjust sugar amount to
taste. For a sugar-free version, substitute Splenda and calorie-free
carbonated drink.
